This easy and delicious week night dinner pasta has it all! Spicy Italian sausage, fresh herbs, leafy green spinach and a spicy twist with our Mango Magic hot sauce giving it a nice fruity kick!

Serves 4 servings
Ingredients
● 400g penne pasta
● 6 (Italian) sausages, casings
removed
● 1 tbsp olive oil
● 1 yellow onion, finely chopped
● 3 garlic cloves, crushed
● 1 cup passata
● 60ml Mango Magic Salsa
● 1 tsp dried Italian herbs
● 2 big handfuls of spinach
● 1⁄2 cup grated parmesan cheese,
plus extra for serving
● Salt & black pepper, to taste
Preparation
1. Bring a large pot of salted water to a boil. Cook the penne until al dente.
2. In a large pan, heat the olive oil over medium heat. Add the chopped yellow onion and
sauté until soft and translucent. Stir in the crushed garlic and cook for another minute.
3. Remove the sausage meat from the casings and add it to the pan. Break it up with a
spoon and cook until nicely browned.
4. Pour in the passata, followed by the Italian herbs and Mango Magic salsa. Stir it all together and let it simmer for a few minutes so the flavors can come together.
5. Stir in the grated parmesan cheese until melted and creamy. Season with salt and
pepper to taste.
6. Toss in the spinach and let it wilt into the sauce.
7. Add the cooked penne to the sauce and toss to coat everything evenly. Add a splash of
reserved pasta water if the sauce needs loosening.
8. Serve with parmesan cheese, fresh basil and Mango Magic salsa.
