These delicious, super easy and super tasty jackfruit tacos are ready in under 30 minutes! Marinated in our smoky Bold Beetroot hot sauce and alongside a silky smooth avocado cream

Serves 6 servings
Ingredients
● 400g canned jackfruit, drained and
shredded
● 1 tbsp olive oil
● 1 small onion, finely chopped
● 2 garlic cloves, minced
● 1 tsp smoked paprika
● 1⁄2 tsp ground cumin
● 1⁄2 tsp salt
● 60ml (1⁄4 cup) vegetable broth
● 60ml (1⁄4 cup) Bold Beetroot Salsa
● 6 small corn tortillas
For the Creamy Avocado:
● 1 ripe avocado
● Juice of 1⁄2 lime
● 3 tbsp Greek yogurt
Preparation
1. Heat olive oil in a pan over medium heat. Add onions and garlic, sauté until softened.
2. Add shredded jackfruit, smoked paprika, cumin, and salt. Stir to coat.
3. Pour in vegetable broth and cook for 5-7 minutes.
4. Stir in Bold Beetroot Salsa and cook for another minute.
5. Blend the avocado, lime juice, and Greek yogurt until smooth. Set aside.
6. Warm tortillas on a dry pan until slightly charred.
7. Fill each tortilla with jackfruit mixture. Garnish with avocado cream, pickled onions and
garnishes of choice. Drizzle with Bold Beetroot Salsa to taste.
